Sambalak Tarrung or Aubergine Sambal is another Torajan side dish and great for a large feast.
2 medium sized aubergines
2 large tomatoes
3 birds eye chilis
1 spring onion
2 red shallots
3 cloves of garlic
1/ Skin and wash the aubergine then slice in half then slice again thinly.
2/ Peel and cut shallots, chili and garlic then cut the spring onion into 1 cm lengths then cut finely length ways.
3/ Wash then chop the tomatoes roughly.
4/ Place a large wok or frying pan over a stove on to medium heat pour in a little oil and fry the shallots and garlic together then slowly add the spring onions, chilli and tomatoes, finally the aubergines, adding a little salt to taste then allow to cook together for a few minutes.
The dish is now ready! Serve with other side dishe’s and freshly steamed rice!
